Spanakopita (Sort Of)

Last week there was this great recipe on BBC 2.  They call it “spinach and feta baklava,” but surely it’s just a spanakopita without the egg?

I bought a pastry brush for the occasion and had a go.  It turned out like this:


I should have scored the lines in the top more forcefully, because it was hard to cut.  Tasted good though.  For those who have reservations about the pistachio nuts  – don’t worry, they work.

2kms swum on Tuesday, 1.25km on Friday, 3km today.
